Anguria Bellini Sunrise

The Anguria Bellini Sunrise is refreshing and light. The vodka gives it body and the combination of vodka, muddled cucumber, and lime juice balances the sweetness of the orange juice and watermelon nectar. Plus, the Prosecco gives the drink the festive air you want in a birthday cocktail
Be prepared to make several of these drinks at once since you won't want to waste an open bottle of Prosecco.

Equipment

  • food processor or blender
  • muddler (or, in my world, the back end of a wooden spoon)
  • cocktail shaker
  • strainer
  • 8 oz heavy bottomed glass (chilled)

Ingredients
  

  • 3 oz vodka ('m a Grey Goose or Ketel One fan, myself)
  • 1 oz fresh lime juice
  • 3 oz fresh watermelon nectar recipe below
  • 2 slices (1/4 inch thick) cucumber (peeled)
  • 1 oz fresh orange juice
  • Prosecco to taste

Ingredients for Fresh Watermelon Nectar

  • 1/4 medium watermelon
  • 1 cup water
  • 3/4 cup sugar

Instructions
 

  • Muddle the cucumber slices in a cocktail shaker. The best way to muddle cucumbers is to press the slices against the side of the shaker with a wooden muddler--or, if you're like me and don't own a muddler, use the back end of a wooden spoon--and twist the muddler about six or seven times. You're done when you can smell a strong cucumber aroma.
  • Add the remaining ingredients except the Prosecco and shake for several seconds.
  • Pour into a chilled glass.
  • Top with Prosecco to taste
  • Drink quickly. Repeat as many times as it takes to use up the Prosecco.

Fresh Watermelon Nectar

  • Heat up the water in a small saucepan. Once it's boiling, add the sugar, stirring constantly until all of it dissolves. Take off heat immediately and cool. Voila - simple syrup that will keep in the fridge up to a week (though you'll probably use most of it in the nectar).
  • Cut up the watermelon and pulverize in batches in a food processor or blender. Set aside in a quart size pitcher.
  • Add the simple syrup to taste to the watermelon. Refrigerate for at least an hour before using. The nectar will keep in the refrigerator for up to a week.
